This lovely brunch or breakfast recipe uses potatoes, flavoured with herbs and cheese made into a delightful ten pointed star shape using your favourite sausages. Here we have used frankfurts that are so easy to cook with. You could however, cook any sausage to shape the star. The result is an attractive centrepiece that makes a very tasty and satisfying meal.
Potato and Sausage Star
Ingredients:
- 3 medium potatoes, steamed and peel removed
- 4 frankfurts, uncooked or your favourite sausages, cooked
- 1/4 cup spring onions, chopped finely
- 1 small clove of garlic, finely minced
- 1/4 cup parsley, chopped finely
- 1 small sprig of rosemary, finely chopped
- 1 egg
- 1/4 cup Parmesan cheese
- 1/2 cup cheddar cheese
- Salt and freshly ground black pepper
Method:
- Pre heat oven to 180º C Fan forced
- Wash and steam the potatoes with the skin on until tender and then peel
- Place the potatoes into a large bowl and mash. Set aside to cool for a few minutes
- Season with salt and plenty of freshly ground black pepper
- Chop the shallots, rosemary and parsley finely and mince the garlic
- Add the egg, shallots, parsley, rosemary, garlic and Parmesan cheese to the potato mix
- Using a fork, combine all the ingredients well and set aside
- Cut the frankfurts across wise and then in half nearly to the end but keeping the then end intact
- Separate the ends of the frankfurts and place a toothpick to keep the ends apart. Make sure you leave a little toothpick showing either side of the franfurt to make removing it easier
- Place a sheet of baking paper on a baking tray and arrange the frankfurts into a ten pointed star
- Fill the star with the potato mix
- Scatter the cheddar cheese over the top of the star.
- Place the tray in the preheated oven and bake until browned, about 10-15 minutes
- Remove the toothpicks carefully and cut into wedges
- Serve with a green garden salad
