Ann’s Lemon Pikelets

Our friend Ann makes the best pikelets and these were lemony delicious. Though simple they are always a hit with a nice cup of tea, served with lashings of your favourite jam and a dollop of double cream.

Ann’s Lemon Pikelets

Ingredients:

  • 1 cup Self Raising flour
  • 1/4 cup caster sugar
  • 1 egg
  • Pinch of salt
  • Zest of 1 lemon, finely grated
  • 1/2 tsp vanilla extract
  • 1/2 cup of milk approx

Method:

  1. Sift the flour with the salt in a bowl
  2. Make a well in the centre and add the sugar, egg, vanilla, lemon zest and milk
  3. Mix everything together using a whisk  until all the flour is incorporated and the mixture is smooth and thick
  4. Set the batter aside for a few minutes
  5. Use a heavy based pan and heat on medium high till a small knob of butter, about a teaspoon, dropped onto the saucepan foams up
  6. Lower the heat to medium low
  7. Drop dessertspoonfuls of the mixture into the saucepan
  8. Wait until bubbles form on the pikelet then gently turn
  9. Cook for a further minute until the pikelet is a good colour on the other side
  10. Remove to a warmed plate and cover
  11. Repeat with the rest of the batter
  12. Serve with your favourite jam and a dollop of the best double cream
