Our friend Ann makes the best pikelets and these were lemony delicious. Though simple they are always a hit with a nice cup of tea, served with lashings of your favourite jam and a dollop of double cream.
Ann’s Lemon Pikelets
Ingredients:
- 1 cup Self Raising flour
- 1/4 cup caster sugar
- 1 egg
- Pinch of salt
- Zest of 1 lemon, finely grated
- 1/2 tsp vanilla extract
- 1/2 cup of milk approx
Method:
- Sift the flour with the salt in a bowl
- Make a well in the centre and add the sugar, egg, vanilla, lemon zest and milk
- Mix everything together using a whisk until all the flour is incorporated and the mixture is smooth and thick
- Set the batter aside for a few minutes
- Use a heavy based pan and heat on medium high till a small knob of butter, about a teaspoon, dropped onto the saucepan foams up
- Lower the heat to medium low
- Drop dessertspoonfuls of the mixture into the saucepan
- Wait until bubbles form on the pikelet then gently turn
- Cook for a further minute until the pikelet is a good colour on the other side
- Remove to a warmed plate and cover
- Repeat with the rest of the batter
- Serve with your favourite jam and a dollop of the best double cream
