4 Ingredient Banana, Mulberry Ice Cream

This is a variation of a great recipe we reposted a while ago from skinnymom.com. We are using some of the bumper mulberry harvest for this delicious and super easy low calorie ice cream.  We are also using sugar bananas from the garden so it is a really organic dessert. If mulberries are not available where you live you can susbtitute other berries like raspberries or strawberries. The flavour of the banana shines through and adds sweetness.

4 Ingredient Banana, Mulberry Ice Cream

 

Ingredients:

Ice Cream:

  • 2 bananas, halved lengthwise, then sliced and frozen
  • 1/2 cup of mulberries, de-stemmed, halved and frozen
  • 2 Tblsp heavy cream
  • 1/2 tsp vanilla extract

Spiced, Stewed Mulberry Sauce:

  • 3 cups mulberries, cleaned and stems removed
  • 3 whole cloves
  • 1/4 tsp cinnamon
  • 1 cup sugar
  • 1/2 cup water

Method:

Ice Cream

  1. Place all the ingredients in a blender or a food processor and blend until smooth. The consistency should be like soft serve ice cream and the banana completely blended
  2. Transfer to a freezer safe container large enough to hold 2 cups and freeze for at least three hours.
  3. Scoop into dessert dishes and serve with some spiced stewed mulberry sauce

Spiced, Stewed Mulberry Sauce:

  1. Place sugar and spices in a saucepan
  2. Bring to the boil and dissolve the sugar completely
  3. Add the mulberries to the syrup in the saucepan and return to the boil then lower the heat to a simmer and cover
  4. Simmer covered for about 20 -30 mins to the consisency preferred.  I chose to have the mulberries keep their shape but you may prefer to cook them right down to a thick sauceso add a little more cooking time to achieve the consistency you want.

The finished ice cream is soft and easy to serve.
