Italian sausages make a great meal and with potatoes, onion, garlic, fresh tomato, some rosemary and spices they are transformed into something really special.
Italian Sausages with Onion, Potato and Tomato
Ingredients:
- 6 Italian sausages or your favourite sausages
- 2 tomatoes, chopped finely
- 2 large Desiree potatoes, peeled and cut into small chunks
- 1 onion, cut in half lengthwise and then sliced
- 2 cloves of garlic, minced
- 1 large sprig of fresh rosemary, stalk removed and leaves finely chopped
- salt and freshly ground pepper
- 100mls dry white wine
- 2 Tblsp olive oil
- 1 small knob of butter
- a good sprinkle of chicken seasoning
Method:
- Cut the sausages into pieces
- Cut the onion in half lengthwise and and then slice
- Heat oil and butter over a medium high heat in a large frypan that has a lid
- Brown the sausage pieces till well coloured
- Lower the heat to medium low and add the sliced onions to the sausages stirring them through well
- Cook for 8-10 minutes until the onion is well caramelised
- Add the minced garlic and cook for a minute
- Add the diced tomato and chopped rosemary and cook for 6 minutes
- Season well with salt and pepper and sprinkle over the chicken seasoning
- Increase the heat to high and add the wine and cook until the wine is evaporated
- Add the potato chunks
- Add enough water to cover the potatoes and then cover and cook till the potatoes are tender

Check from time to time and add a little more hot water if needed to prevent the sausages and potatoes from catching

When nearly done remove the lid and let the juices evaporate
- Serve with a garden salad and some crusty sourdough bread
