Dominique has shared the recipe with us for these delicious and easy to make biscuits. Filled with oats, nuts, dates and seeds they make a great accompaniment for that afternoon cup of tea or for a quick, healthy snack on the run.
Dominique’s Oat, Date and Nut Biscuits
Ingredients:
- 1 cup of brown sugar
- 115 g butter, softened
- 2 eggs
- 1/2 cup coconut flour
- 1/2 cup plain flour
- 1 tsp baking soda
- 3 cups of rolled oats
- 1 Tblsp dessicated coconut
- 1 cup dates, pitted, chopped
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/2 cup walnuts, chopped
- 1 tsp vanilla extract
- 1/2 tsp salt
Method:
- Preheat oven to 180º C Fan Forced
- Line a baking tray with baking paper
- In a large bowl, mix flour, salt, baking soda, oats, nuts, dates, coconut and seeds and set aside
- In a food processor (or stand mixer) cream butter, sugar and vanilla, then add eggs one at a time processing between addition and mix till well combined
- Stir the butter mixture into the dry ingredients and stir through until well combined
- Using a small icecream scoop or tablespoon, take walnut sized spoonfuls of the mixture and place on the prepared baking tray. As they don’t spread when baked you can place them closer together.
- Then press a fork onto the balls to flatten
- Place the tray in the oven and bake for 18-20 minutes until golden brown
- Remove the baked biscuits to a cooling tray and allow to cool
- Serve with your favourite tea or coffee or as a snack anytime
