Carrot, Walnut and Orange Biscuits

These soft biscuits bring together carrots and walnuts and the flavour of orange.  I have included on orange icing to glaze the biscuits. You can also just sprinkle some icing sugar as I have here.

Carrot, Walnut and Orange Biscuits

Ingredients

  • 300 g carrots
  • 130 g butter
  • 120 g sugar
  • 1 egg
  • 170 g plain flour
  • 1 tsp baking powder
  • 70 g walnuts chopped
  • 1 tsp orange zest

Icing

  • the zest of half an orange
  • 2 tblsp of orange juice
  • 100 g of icing sugar

Method

  1. Pre-heat oven to 180 C
  2. Sift the flour and baking powder into a bowl
  3. Wash and peel the carrots
  4. Cook the carrots in water over a medium heat
  5. Drain and mash the carrots well and set aside to cool
  6. When the carrots are cool. cream the sugar and butter until light and fluffy
  7. Add the egg beating incorporating it well
  8. Gradually add the flour mixing well
  9. Fold in the puréed carrot, tsp of orange zest and the chopped walnuts
  10. Line a baking tray with baking powder
  11. Place tablespoonfuls of the mixture on the tray
  12. Bake at 180 C for 15 minutes or until golden brown
  13. Remove to cool on a rack
  14. While the biscuits are hot mix the icing sugar, orange zest and orange juice and ice the biscuits.
  15. Let them cool to set

Variation

You may choose to just dust the biscuits with icing sugar. This mixture can also be made into small patty cakes and iced with a piece of walnut or some candied orange to decorate.
